Lutkala is a 100% natural product, and what’s more, it is available in an organic version because it is made from certified organic apple pomace. Its functional properties are the same as those of conventional Lutkala, thus:
- binds water brilliantly, so that the final product has the right consistency, without the need for using other thickeners, and thus the desired juiciness (e.g. meat products) and freshness for a longer time (e.g. bakery and confectionery products),
- performs its function over a wide range of pH and temperature, moreover, Lutkala is thermostable,
- more than 60% of Lutkala is dietary fibre, which has numerous health-promoting benefits, as well as allows to lower calories.
