Owing to its ability to retain water in the product, Lutkala positively impacts the production of processed meat products. This is because:
- it increases the succulence and improves the texture of meat products,
- it allows to decrease the amount of or completely eliminate the phosphates, which allows for obtaining the “clean” label;
- thanks to its high fiber contents, it decreases the calorific value of meat processed products, which is especially helpful in “fit” type products;
- it improves sensory properties;
- due to its completely natural origin, it perfectly fits in the range of traditional products, which should not contain any artificial additives.
